Today we’re cooking up some New England fish chouter or what some call fish stew. Ok to make this work you need a firm fish such as some cod – about two and a half pounds or you could use haddock or any kind of firm fish that will stand up to a good simmer. Take a black iron pot and put it directly on the hot coals.
Now take a pound of salt pork and we’re going to render it down just a bit get some of that fat out of it. This chowder is going to be old school, it contains no potatoes all.
