Spicy Beef Empanadas

We are taking one the best things from Argentina and bringing it home. No not Messi (get it? Messi the football [soccer] player from Argentina?). I’m talking about Empanandas!!

The pastry for empanadas is very simple – flower with lard and a tablespoon of salt until you have a bread crumb consistency and then pour in about 50 60 70 ml of water, cold water until it just about comes together. Don’t overwork it, just kind of push together until you’ve got one lump. Then we’re going to wrap it in plastic wrap and put it in the fridge to rest for an hour.
For the filling of the Empanada we have an onion, 2 cloves of garlic and green pepper all diced up and frying up with a shot of oil. Then we add in the spices – ground cumin paprika and chili powder a pinch of salt and pepper. Essentially what we’re doing is taking a spanish dish from the streets of Argentina and cooking it up here (or where ever you are).
