Acorn Squash Stuffed With Lentils and Mushrooms

This recipe is pretty amazing because you’re essentially making a bowl out of the main ingredient, acorn squash.

It’s basically the bread bowl of the Plant world.

Mushrooms – they are fungus but they’re also really high in selenium, they have immune boosting properties, and they’re pretty much magic.

The thing I love about squash is how hardy they are.

In fact you can use acorn squash for all kinds of things, like a bookend, a paper weight, a door stopper.

You can even use them to help you get in shape.

Ok so this video may be a bit corny, but the recipe is fantastic. My roomate in my younger days was into the whole vegan thing and it’s dishes like this that could actually make me consider giving veganism a try.
